I'm so sorry for the delay on this. Our Admin team has checked this but sorry to have to inform you guys they said it is not possible on the Product grid and Collection products elements now. It is possible on the Variable product extension only.

It would be good to have this feature implemented. Without it on collection page, it creates customer confusion as they select the variant on the collection page, but it's hidden on the product page.
